Caprese Salad: Bocconcini Cheese, Tomato, and Basil make the perfect salad



Insalata Caprese Salad:

This salad originates from the Italian region of Campania and is usually served as an antipasto rather than at the end of dinner. It combines buffalo mozzarella, fresh tomatoes, and basil. It tastes very fresh, with the mild cheese, sweet basil and tangy tomatoes. A beautiful starter for any party.



Ingredients:

2 fresh ripe tomatoes
1 large bocconcini cheese ball
1 tbs olive oil
1 tsp baslamic vinegar
1 basil plant

Cooking Instructions:

1) Slice up some tomato, bocchini cheese and pluck some fresh basil.

2) Place the tomato, cheese and basil in a layer.

3) Stack them with two pieces of tomato, two pieces of cheese and two layers of basil.

4) Drizzle some olive oil and balsamic vinegar.

5) Enjoy!!!!

The Secret to Steamed Fish

 
The best way to cook fresh fish is steaming. Steamed fish is healthy and retains the beautiful flavours of fresh fish. If the fish is not fresh it will have a fishy taste. This is only to be used for fresh fish.

Ingredients:

1 fish
1 small piece of ginger
1 stalk of green onion
3 tbs of soya sauce
1 tbs of sesame oil
8 tbs of vegetable oil

Cooking Instructions:

1) To ensure even cooking, cut a slit down the middle so the heat can enter the thickest part of the fish.

 2) Slice up green onion and put it aside. This will be used after it is cooked.

 3) Place thinly sliced ginger in and on the fish.

 4) When the water is boiling, place the fish on a plate and steam for 10 min.

 5) In a small pot heat up some oil. Then pour the hot oil over the fish and the green onion. Add soya sauce and a bit of sesame oil.

Veal Nachos : What to do with left over veal? Make Nachos!!!!

Have you ever wondered what to do with left over veal? Why not turn it into an amazing nacho dish? Here is how:

Ingredients:

Left over cooked veal
1 tub of humus
1 jar of olives
1 cup grated mozzarella cheese
1 bag of nacho chips
1 jar of salsa


Cooking Instructions:

1. Dig around your fridge and find some left over meat. In this case, Veal!!!  Slice it into tiny pieces and put it aside.

2. Grate some mozzarella cheese. Pizza quality skim mozzarella cheese is fantastic because it is stringy and has less fat.

3. Lay a layer of nacho chips in a oven proof dish and sprinkle the cheese over top. Feel free to make a couple layers of cheese and chips.

 4. Dice some olives and spread them evenly over the nacho chips.

5. Add your thinly sliced veal over top of the chips.

6. Hit toast on your toaster oven and push the dial to the middle. Like 5/6 out of 10. Then wait patiently until the toaster oven clicks. If you see the cheese browning then take it out.

7. Serve with your favorite salsa and humus.

Smoked Salmon and Cream Cheese Appetizer

Ever just want to eat pure salmon and cream cheese without the bagel? Well with this fantastic appetizer you can! Delicious, wonderful, and ooooooooh so good.

Ingredients:

1 package of smoked salmon
1 tub of cream cheese from your local deli or grocery store
1/2 tea spoon of dill

Cooking Instructions:

1. on a sheet of plastic wrap, lay down a lawyer of smoked salmon. Make sure there are no spaces between them. Spread a thin layer of cream cheese. Then sprinkle some dill on top of the cream cheese.

2. Roll the smoked salmon in the plastic wrap and squeeze it so it forms a tight cylinder. Leave it in the fridge to harden before you cut it.

3. After letting it sit in the fridge for 15 min to 30 min. Remove the plastic wrap and slice it. It may look a bit messy but it will taste amazing! Perfect for any party.

Green Tea Chocolate Pancakes: Make breakfast the most important meal of the day!


Pancakes are perfect for breakfast, brunch, or just plain old dessert. Spice up a favourite pancake recipe by adding green tea and chocolate chips into the mix.

Ingredients:

1 tablespoon of mat cha green tea powder
1 cup instant pancake mix
1/2 cup water
1 stick of butter (for a vegetarian option use margarine)
1/4 cup of chocolate chips

Cooking Instructions:

1. Purchase "Mat Cha" green tea at any Asian supermarket. Do not purchase Zen cha because it will not work.

2. Simply combine mat cha green tea and instant pancake mix together.


3. Add water until the mix is like a thick paste. Too much water and it will not rise. I recommend adding water until it looks like a thin pudding.

4. Spoon out the pancake mix on a nonstick pan on medium heat. Make sure you grease the pan with butter before spooning the mix.

5. Add some chocolate chips. Do not add them into the mix and then pour because it will be uneven.

6. Fry until golden brown, plate, and serve.

Crazy Good Lamb Nachos - Use lamb instead of beef to make it crazy good!

Nachos are fantastic for a light snack or a full meal. To enhance the flavour of your favourite nachos use lamb instead of steak.

Ingredients:

1 cup of marble cheese
1 lamb shoulder steak
1 tomato
1/4 cup of fresh parsley
1 bag of nacho chips
1 lemon
salt and pepper
2 tbs olive oil

Cooking Instructions:

 1. Cut up the tomato and parsley and combine into a bowl.

2. Add green onion, lemon juice, and olive oil to the mix.  Add salt and pepper to taste. 

3. Fry 1 lamb steak and cut into thin slices. Then add the cheese and nachos and nuke in the microwave for under 1 min. 


4.  Add all the toppings on top of the melted cheese and nachos. Serve and enjoy!

Pan Fried Lamb Shoulder: Celebrate Easter with Lamb

Lamb is often served during Easter because Jesus is often referred to as the "Lamb of God". Make your Easter dinner memorable with this easy and affordable dish.

Ingredients:

2 pieces of lamb shoulder
1 teaspoon of rosemary
1 teaspoon of tex mex mix
1 cup white wine
5 table spoons of olive oil
black pepper
3 table spoons of soya sauce
1 large table spoon of miso paste

Cooking Instructions:

1. Combine the lamb, oil, white wine, soya sauce, rosemary, tex mex mix, and black pepper in a bowl. Add the lamb steaks.

2. Rub the miso paste into the meat and let the meat sit over night in the fridge.

3. Take the steaks out of the fridge 30 min before you fry them. Fry at medium high heat for 3-4 min per side.

4. When frying use a cover to ensure oil does not spatter everywhere.

5. Plate and enjoy.

Easy to Make Green Tea Crepes: Beautiful, Creative, Green!

Crepes are easy to make especially if you use ready made pancake mix. To jazz up a plain favourite, add Japanese green tea (mat cha). It will look green and taste amazing!

Ingredients:

1 box of strawberries
1 box of instant pancake mix
1 scoop of your favourite ice cream
1 table spoon of green tea
1 bottle of the best maple syrup money can buy

Cooking Instructions:

1. Take one cup of the instant pancake mix into a bowl. Make sure you use the 'just add water' mix because it will make life easier.

2. Add at least one table spoon of green tea powder. The more tea you use the better it will taste. (I know, it is really expensive so don't do this too often)

3. Add water slowly and whisk until it is a bit runny. The consistency should look like thick cream.

4. Pour some out into a frying pan and make sure it is really thin. Heat and flip when it cooks through. You can also add chocolate chips to enhance the flavour.

5. While it is cooking, cut up some strawberries. These will be placed inside your crepe.

6. Once the crepe is fully cooked, place on a plate and add the strawberries.(Note that in this picture there are brown spots in the crepe. They are the melted chocolate chips)

7. Fold over and add your favourite ice cream.

8. Add your favourite maple syrup and you are done. Enjoy this for breakfast, brunch, or dessert.
